This easy dessert recipes only takes about 15 minutes to whip up, but it does require 55 min of baking and at least 4 hours of refrigeration, so you’re probably gonna wanna make this one the night before you need it. LIVE, LOVE, EAT and as always, ENJOY!!!

Hump Day in case you’re not aware is code word for Wednesday, middle of the work week, thus the, “hump.” Anyway, I’m sure you just want to get down to business and get today’s easy dessert recipes, right? Okay, well here they are…

Oh, by the way, this is another recipe that will suit non-vegetarians, vegetarians and vegans alike!! Can you say, “Universal?”

Easy Vegan Pecan Cookies

3 cups unbleached white flour

2 cups sugar (vegetarian and vegans would probably agree to use evaporated cane juice sugar)

1 1/2 cup crushed pecans

1/2 cup vegetable oil (vegan margarine will also work)

2 tsp. baking powder

Optional Ingredients: 8-16 oz. chocolate chips (vegan, of course, if required)

Small amount of soy/rice milk

Directions:

1. Preheat oven to 400 degrees. Lightly oil a cookie sheet.

2. Mix all dry ingredients together in a large bowl.

3. Add vegetable oil or vegan margarine, mix.

4. Add a bit of milk if necessary for dough to be workable, but not exactly sticky.

5. With a spoon, scoop up about a TBSP and roll into a ball with hands. Flatten the ball slightly and place onto greased cookie sheet.

Bake approximately 15 minutes. Cool, eat and as always, ENJOY!!

P.S. These cookies can also be rolled and cut with cookie cutters by the more adventurous bakers, however, keeping with my theme of easy dessert recipes, I chose not to advise that in the recipe.

Till next time…

I don’t know about you, but I really like Rachel Ray’s style when it comes to cooking. Not only does she have great ideas for dinner recipes, but she also has some great ideas when it comes to easy dessert recipes. Here’s one that I found today from her magazine. As always, ENJOY!!

P.S. Below the recipe you’ll find a link to her mag page where you can sign up for a free, yes, FREE issue.

Mocha Ice Cream Cupcakes
INGREDIENTS
 			 				- One 12-count box sugar ice cream cones
- 4 tablespoons unsalted butter, melted
- 3/4 cup almonds, toasted and chopped
- One 3-ounce bar semisweet chocolate, plus more for shavings - 3 cups coffee ice cream, softened
- 1/2 cup chocolate-covered espresso beans, finely chopped
- 1/2 cup heavy cream
- 1 tablespoon confectioners’ sugar
DIRECTIONS

Using a food processor, grind the ice cream cones into fine crumbs. Transfer to a medium bowl and stir in the butter. Divide the crumb mixture among the cups of a 6-cup jumbo muffin pan and press about three-quarters of the way up the sides of each cup. Spoon 1 tablespoon almonds into each cup.

In a small, microwaveable bowl, melt 3 ounces chocolate at medium power in intervals, stirring occasionally. Top the almonds with the melted chocolate to cover. Freeze for 10 minutes.

Spoon about 2 tablespoons ice cream into each muffin cup. Sprinkle 1 tablespoon chopped espresso beans onto the ice cream and flatten with the back of a spoon. Add another 2 tablespoons ice cream and the remaining almonds and flatten again. Add the remaining ice cream and espresso beans, and flatten. Freeze for at least 1 hour.

Whip the cream and confectioners’ sugar until soft peaks form.

Run a knife around the edges of the muffin cups to remove from the pan. Top the cakes with the whipped cream and chocolate shavings.

Sorry I missed ya’ll yesterday, spending some QT with the family! Anyway, I’m back today with a brand new recipe. I’m always on the hunt for new and different easy dessert recipes and I’ve got one I think you’re gonna like. They’re not your average brownies, they’re brownies with a little shortbread twist. Pretty darn good, if ya ask me! Anyway, here’s the recipe.

P.S. The prep time is only about 15 minutes, easy enough, however the baking time is about 50 minutes in total, so make these ahead of time, so they’ll be ready for dessert after dinner.

Shortbread Brownies

1 cup all-purpose flour

1/4 cup packed brown sugar

1/2 cup butter

1/4 cup miniature semisweet chocolate pieces

1-1/3 cups granulated sugar

3/4 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1-1/2 teaspoons baking powder

1/2 teaspoon salt

3 eggs

1/3 cup butter, melted

1 tablespoon vanilla

1/2 cup miniature semisweet chocolate pieces

Directions

1. Preheat oven to 350 degree F. Line a 9x9x2-inch baking pan with foil; set aside. In a medium mixing bowl stir together 1 cup flour and the brown sugar. Cut in the 1/2 cup butter until mix resembles coarse crumbs. Stir in the 1/4 cup chocolate pieces. Press into prepared pan. Bake for 8 minutes.

2. Meanwhile, in a large mixing bowl stir together granulated sugar, 3/4 cup flour, the cocoa powder, baking powder, and salt. Add eggs, melted butter, and vanilla; beat by hand until smooth. Stir in the 1/2 cup chocolate pieces. Carefully spread over crust in pan.

                     3. Bake this easy dessert recipe for 40 minutes more. Cool brownies in pan on a wire rack. Lift brownies out of pan by lifting up on foil. Cut into bars.

Makes about 24 brownies! As always, ENJOY!! Chat with ya soon!

I was just thinking about all the people out there that are vegetarians and/or vegans who might be in search of some easy dessert recipes, so in fairness to them, I know will be posting some vegetarian and vegan recipes in addition to the non-vegetarian/vegan recipes that I already post. With that being said, here’s the first one:

Pumpkin Muffins

¼ cup vegan margarine
½ cup sugar
2 egg replacer
2 ½ cups Self Raising flour
½ cup soy milk
1-1½ cup pumpkin puree (Just cover pumpkin in a saucepan with water and cook until tender and water soaked into puree)

1. Preheat oven to 200°.
2. Blend the margarine, sugar in a bowl with handheld beater.
3. Then beat in the egg replacer and fold in the pumpkin puree and soymilk.
4. Fold the flour into the wet mixture and place into prepared muffin tins.
5. Sprinkle with cinnamon sugar and bake for approximately 20-25 minutes

Servings: 6 large muffins or 12 small muffins

P.S. This is one of many recipes that I acquired from an e-book I bumped into online. I’m not really into buying ebooks, but this one is actually pretty good and cheap, too. It’s called, “The Wicked Vegetarian Cookbook.”

Enjoy the pumpkin muffins if you decide to make them.

Another great video for you all: Apple Blueberry Walnut Crisp!! ...

Another great video for you all: Apple Blueberry Walnut Crisp!! It’s healthy, but tastes great, which is a big bonus! I made it myself last night and the kids couldn’t get enough of it. If you can spare 5 minutes, it’s definitely worth it. Talk to ya soon…

Today's Easy Dessert Recipes

Hey all you easy dessert recipes lovers out there!! Just a quick update. I was browsing the Amazon site today and noticed that the cookbook I recommended to you a couple of days ago, Easy Desserts is down to only one available copy left. It’s a pretty popular book, I guess. Eventually they will have more, it’s the when will they have more that I don’t have the answer to. Oh, the best part is the cookbook, which, by the way, if you didn’t read my earlier post has over 400 easy dessert recipes is down to only $11.53. And that’s for a new copy, not used!!

Who I Am and Why I Absolutely Love Easy Dessert Recipes...

Hey everyone! I just realized that I started up this really cool blog, but haven’t formally introduced myself. Apologies about that, I guess I’m just not a “formal” person. Anyway, to informally introduce myself, I am known as the “Dessert Queen.” Let me give you a little background info about myself. I have eight kids, yes that did say eight, who absolutely have to have a “snack” before they go to bed. I can’t fault them for it. Who doesn’t like to have a really good snack before bed. There’s nothing like laying in bed trying to go to sleep when you’re poor little tummy starts growling. It’s nearly impossible to catch some Z’s under those circumstances. So, sooner than later, the same old bedtime snack of cookies and milk became a little more than boring, so much so that I had to hear every night, “Do we have to have cookies and milk AGAIN, Mom?” Uh-oh, I had to come up with some different ideas for my little guys and gals. So, the result of me tapping into my creative side? Happy kids with full bellies and this, “Easy Dessert Recipes” blog! I figured I couldn’t possibly be the only mom out there in search of some really easy dessert recipes, so I decided I’d share. Lots of Love to you and yours…

This Blog Isn't Named, "Easy Dessert Recipes" for Nothin'!

Hey guys and gals! The Dessert Queen is here, as I like to call myself. The title of this post is, “This Blog Isn’t Named, ‘Easy Dessert Recipes’ for Nothin’,” because number one, it’s true and number two, I’m gonna give you yet another, one of many, super dooper easy dessert recipes that I have up my sleeve.

Sidenote: There are many ways to get inspiration for easy dessert recipes. One way that I use is to simply just throw things together and create easy dessert recipes myself just by using the ingredients that I can find in my cupboards. That’s one way. Another way is to look online, as you’re doing now, which is awesome. The last way is to find them in real cookbooks. Now, I must say that books are an absolute passion of mine. You can scan, scroll, look at the pictures and all that kind of stuff. You can also vary the recipes and throw your own little twist on things (really cool). They’re just great, however, it’s hard to know which ones are worth buying. So, with that in mind, I thought from now on, I’d give a book recommendation at least once a week. Look for it in my next post, probably sometime later today.

Now, for what we’ve all been waiting for: today’s easy dessert recipe!!

I call this one, “Chocolate Covered Strawberry Delight”

It’s a little variation on your typical strawberry shortcake!

Servings: 4

First things first, here’s what you’re gonna need:

4 tall glasses (the kind for parfaits)

1 cup sliced strawberries

1 pkg. chocolate instant pudding mix

2 cups cold milk

6-7 Oreo cookies, crumbled coarsely

1/2 cup Cool Whip topping

Now, here’s what you do:

1. Open the pudding mix, dump into medium glass bowl, pour in the cold milk and beat it with a whire wisk, about 2 minutes or so. Put that in the fridge for at least 5 minutes.

2. Now it’s time to layer! You’re gonna start with the pudding, then the strawberries, and then the cookies. You’ll do it again, for a total of two layers of each and then you’ll have enough pudding to put a layer on top of the last layer of cookies. On top of this final layer of pudding, is where you’re going to plop on that cool whip topping!

Now try that for G-O-O-D!!! Pretty tasty, huh? And believe it or not, it’s not that bad on the tummy. If you go for the low fat oreo’s, the lite cool whip and the fat-free milk, there will only be about 4 grams of fat per serving for one of these babies!! Please enjoy!! (in moderation that is!)

Here’s a really cool video to give you a little dessert...

Here’s a really cool video to give you a little dessert inspiration for tonight. It’s super easy and super tasty. The video is just about 3 minutes long, however, I fast forwarded to about the last minute and a half or so to get right to the recipe. Hope you enjoy!!

A Really Cool Book That's Packed With Awesomely Easy Dessert Recipes

Hey folks!
1 pound cake

2 cups chocolate ice cream (or whatever flavor you prefer)

2. Frost entire cake with Cool Whip: sprinkle with coconut.

3. Eat and enjoy!!

Now, please tell me if that wasn’t one of the most easy dessert recipes you have ever found!

Are Easy Dessert Recipes Non-Existent?

The answer to that question all depends on who you’re asking and what that person’s definition of “easy” is. To different people, the word, “easy” when it comes to cooking, can take on many different meanings. To some, an easy dessert recipe may consist of whipping up a homemade carrot cake complete with homemade icing to go with it. However, to others just the mention of the words, “from scratch” is enough to send chills up and down their spine.

Now, I myself, personally don’t mind spending a few hours in the kitchen preparing some really good recipes for my family when I have time, however, most of the time, time is just not on my side. This is the main reason why I love finding and preparing easy dessert recipes. They’re quick, they’re easy and everyone’s happy!

Below, you’ll find one of my family’s all-time favorite easy dessert recipes. Please enjoy.

“No Time” Banana Pie Cups

Makes 2 Servings. Multiply accordingly.

1 banana, sliced

1 pack, 100 CALORIE PACKS LORNA DOONE shortbread cookie crisps, divided.

2 JELLO-0 Vanilla Pudding Cups (Sugar Free, Reduced Calorie is fine)

2 TBSP. thawed COOL WHIP topping

For Each Dessert Cup, Layer Ingredients In This Order:

Vanilla Pudding, Bananas, Cookie Crisps.

You should have two layers of each. On the final layer, top the cookie crisps with a spoonful of Cool Whip. Yum!!
